Mette is behind several bestselling books - among them “The Professor's Green Energy Porridge”, which she has written in collaboration with Oluf Borbye Pedersen, considered one of the world's leading researchers in health-promoting bacteria.

Villa Rex was built in 1857 so that the king could hold councils of state, meetings and banquets without leaving the scenic surroundings of Skodsborg. Villa Rex has been renovated with respect for history and is now used for parties and meetings.
